A Gentle and Patient Approach

After giving ourselves the means to harvest healthy grapes at optimal maturity, we strive to highlight this potential during winemaking and aging to sculpt the raw material that is our grapes into pure wines, precise and elegant, the hallmark of our house.

We limit inputs and interventions as much as possible.

Our approach is minimalist: making it simple by putting intention and awareness into our winemaking. We learn something new each vintage!

To achieve this, we prioritize  gentle treatments and handling that is respectful of the grape and the wines:

  •  we use minimal doses of SO2 and mainly at the final stage of bottling;
  • we rely to gravity, thermoregulation and storage in stainless steel tanks under the natural carbon dioxide from alcoholic fermentation;
  • our wines are aged as long as possible on fine lees which nourish them and naturally stabilize them. The aging time is regularly determined by tasting, to find the right balance between fruit and roundness.
  • We favor the descending moonsets, to preserve all the fruit.
  • Our wines are marketed at least 2 months after their bottling, which takes place only when we believe they are ready, and we are fortunate that our customers fully trust us by letting us “give time to time”, to deliver them singular wines, in agreement with ourselves.

Thus, all our wines bear the Landrat-Guyollot signature as a mark of the sincerity of our commitment as an Artisan-Winemaker and to guarantee their origin and consistency of quality throughout the vintages.
